Half chaps are usually used for riding - they cover the calf to the ankle with a strap to go under the boot, but they don't cover the top of the foot. Searching for "leather gaiters" may get you more of what you want.

That looks really cool! You've obviously put a lot of thought into makng al the pieces fit together well. Do you think it will be front-heavy, or will the minimalistic grips on the knives make that not so much of an issue?

I think it's a really neat idea, but I think you would need to approach it carefully from a legal standpoint if you want to rent it out. If that's your plan, it may need to meet building codes for a hotel or other similar structure. At least with rental properties, there are laws requiring bedrooms ...
