All these foods should last well, especially in winter. I carry all my trail foods in linen, cotton, raw silk & leather food bags. I have never carried pemmican, so I can't say if it will tend to seep through cloth bags or not. You can always use paper food bags inside the cloth or leather bags.

I've made pemmican, but not carried it. Think of it like a candybar: if it's cool it won't seep much: if it gets warm, it's sticky goo getting on everything. Personally, were I to carry it, I'd put it in a wide-mouthed, easy-to-clean waxed linen bag.
(if you haven't waxed linen bags before, instructions here)

Personally I find pemmican tastes like eating candles, so I'd prefer to get my fat elsewhere if at all practical. (Plus I have enough of my own to spare. :p )
But to each their own- and it'll last just fine for your purposes. :)

It's got fat in it, and there's no edible fat or oil that won't turn rancid in time. Keeping it cool, sealed from the air and away from direct light will help it last.
